Ingredients
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 3 tablespoons ice water
- 1/2 cup cream cheese
- 1/2 cup ricotta cheese
- 1 tablespoon fresh thyme leaves, chopped
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup cherry tomatoes, halved
Directions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine the flour and salt. Add the butter and use a pastry blender or your fingers to incorporate the butter into the flour until it resembles course meal.
- Add the ice water and stir until the dough comes together. Turn the dough out onto a lightly floured surface and knead a few times until it forms a ball.
- Roll the dough out into a 12-inch (30 cm) circle. Transfer the dough to a parchment-lined baking sheet.
- In a small bowl, mix the cream cheese, ricotta cheese, thyme and pepper until well combined.
- Spread the cheese mixture over the dough, leaving a 2-inch (5 cm) border. Arrange the cherry tomato halves on top of the cheese mixture.
- Fold the edges of the dough up over the filling, pleating as needed. Bake for 25 minutes, until the crust is golden brown.
- Let cool for 10 minutes before serving.
