In a medium bowl, combine the flour and salt. Add the butter and use a pastry blender or your fingers to incorporate the butter into the flour until it resembles course meal.
Add the ice water and stir until the dough comes together. Turn the dough out onto a lightly floured surface and knead a few times until it forms a ball.
Roll the dough out into a 12-inch (30 cm) circle. Transfer the dough to a parchment-lined baking sheet.
In a small bowl, mix the cream cheese, ricotta cheese, thyme and pepper until well combined.
Spread the cheese mixture over the dough, leaving a 2-inch (5 cm) border. Arrange the cherry tomato halves on top of the cheese mixture.
Fold the edges of the dough up over the filling, pleating as needed. Bake for 25 minutes, until the crust is golden brown.
Let cool for 10 minutes before serving.
