Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1/2 cup melted butter
  • 1/2 cup freshly squeezed lemon juice
  • 2 large eggs
  • 1/2 cup sugar
  • 1 tablespoon freshly grated lemon zest
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Confectioners’ sugar for dusting

Directions

  1. Preheat oven to 350°F. Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, 3 tablespoons of sugar, and melted butter. Mix well and press into the prepared baking dish.
  3. In a separate bowl, whisk together the lemon juice, eggs, 1/2 cup of sugar, lemon zest, flour, baking powder, and salt until smooth.
  4. Pour the lemon mixture over the graham cracker crust and spread evenly.
  5. Bake for 30 minutes or until the top is golden brown and the filling is set.
  6. Allow to cool completely before cutting into bars and dusting with confectioners’ sugar.
