Ingredients
- 3 large leeks
- 1/2 cup shredded cheese
- 2 tablespoons olive oil
- 1/4 cup breadcrumbs
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon sea salt
- 1/2 cup pancetta, thinly sliced
Directions
- Preheat oven to 375°F.
- Cut the leeks into thick slices and place in a medium bowl.
- Add the olive oil to the bowl and mix well to coat the leeks.
- Mix together the cheese, breadcrumbs, black pepper, and salt in a separate bowl.
- Spread the leeks in a single layer on a baking sheet. Sprinkle the cheese mixture over the leeks.
- Lay the pancetta slices over the leeks and cheese.
- Bake in the preheated oven for 25 minutes, or until the pancetta is crispy.
- Remove from oven and serve.
