Ingredients

  • 3 large leeks
  • 1/2 cup shredded cheese
  • 2 tablespoons olive oil
  • 1/4 cup breadcrumbs
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon sea salt
  • 1/2 cup pancetta, thinly sliced

Directions

  1. Preheat oven to 375°F.
  2. Cut the leeks into thick slices and place in a medium bowl.
  3. Add the olive oil to the bowl and mix well to coat the leeks.
  4. Mix together the cheese, breadcrumbs, black pepper, and salt in a separate bowl.
  5. Spread the leeks in a single layer on a baking sheet. Sprinkle the cheese mixture over the leeks.
  6. Lay the pancetta slices over the leeks and cheese.
  7. Bake in the preheated oven for 25 minutes, or until the pancetta is crispy.
  8. Remove from oven and serve.
