Ingredients
- 4 cups of chopped carrots
- 2 tablespoons of butter
- 2 cloves of garlic, minced
- 1 small onion, chopped
- 4 cups of vegetable broth
- 1/2 cup of fresh dill, chopped
- Salt and pepper, to taste
Directions
- In a large pot over medium heat, melt the butter and add the garlic and onion. Cook for 2-3 minutes, stirring occasionally, until the garlic and onion are soft.
- Add the chopped carrots and cook for another 3-4 minutes, stirring occasionally.
- Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the carrots are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
- Stir in the chopped dill and season with salt and pepper, to taste.
- Serve hot.
