Carrot and Dill Soup

  • 4 cups of chopped carrots
  • 2 tablespoons of butter
  • 2 cloves of garlic, minced
  • 1 small onion, chopped
  • 4 cups of vegetable broth
  • 1/2 cup of fresh dill, chopped
  • Salt and pepper, to taste


  1. In a large pot over medium heat, melt the butter and add the garlic and onion. Cook for 2-3 minutes, stirring occasionally, until the garlic and onion are soft.
  2. Add the chopped carrots and cook for another 3-4 minutes, stirring occasionally.
  3. Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the carrots are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
  5. Stir in the chopped dill and season with salt and pepper, to taste.
  6. Serve hot.
