  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, chopped
  • 2 teaspoons fresh thyme, chopped
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup brie cheese, cubed


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
  3. Add the zucchini, thyme, broth, salt and pepper and bring to a boil.
  4. Reduce the heat to low and simmer for 15 minutes.
  5. Remove the soup from the heat and stir in the brie cheese until melted.
  6. Serve hot.
