Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs, beaten
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups fresh Nova Scotia blueberries
  • 1 cup heavy cream
  • 2 tablespoons white sugar
  • 1/2 teaspoon almond extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch round cake pan.
  2. In a medium bowl, sift together the flour, baking powder, and baking soda. Set aside.
  3. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk, vanilla extract, and almond extract.
  4. Gradually stir the sifted ingredients into the butter-sugar mixture until thoroughly combined. Gently fold in the blueberries.
  5. Pour batter into prepared pan. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
  6. Allow cake to cool for 10 minutes, then turn out onto a wire rack and cool completely.
  7. In a medium bowl, whip cream until soft peaks form. Gradually add 2 tablespoons sugar and 1/2 teaspoon almond extract, and continue to whip until stiff peaks form. Spread over cooled cake.
