Directions
Cut the fennel bulb into thin slices, discarding the core.
Heat the olive oil in a large skillet over medium heat. Add the fennel slices and cook, stirring occasionally, until the slices are golden brown and crispy on the edges, about 10 minutes.
Sprinkle with salt and pepper.
Sprinkle the grated cheese over the top and continue cooking until the cheese is melted and bubbly, about 5 minutes.
Sprinkle with the fresh herbs and serve warm.
