Ham and Sausage Breakfast Stromboli with Roasted Peppers and Spinach

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced roasted red peppers
  • 2 cloves garlic, minced
  • 2 cups fresh baby spinach leaves
  • 1/4 cup chopped fresh basil
  • 4 ounces cooked ham, diced
  • 4 ounces cooked sausage, diced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded Cheddar cheese
  • 1 (14-ounce) package refrigerated pizza dough
  • 1 egg, beaten

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a skillet over medium heat. Add onion and roasted red peppers; cook and stir until onions are tender, about 5 minutes. Add garlic; cook and stir until fragrant, about 1 minute. Add spinach and basil; cook and stir until spinach is wilted, about 3 minutes.
  3. Stir in ham, sausage, mozzarella cheese, and Cheddar cheese until evenly combined.
  4. Roll pizza dough into a 12x14-inch rectangle. Spread ham and cheese mixture down the center of the dough. Fold the dough over the filling, pressing the edges together to seal. Place stromboli on a baking sheet.
  5. Brush beaten egg over the top of the dough. Bake in preheated oven until golden brown, about 25 minutes.
  6. Allow to cool for 5 minutes before slicing and serving.
