Ingredients

  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked turkey, cubed
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon fresh parsley, chopped
  • Salt and pepper, to taste

Directions

  1. Set the Instant Pot to sauté mode. Add the onion, carrots, celery, and garlic and cook until softened, about 5 minutes.
  2. Add the chicken broth and turkey and stir to combine. Add the thyme, oregano, parsley, salt, and pepper and stir to combine.
  3. Secure the lid on the Instant Pot and set the valve to sealing. Set the Instant Pot to high pressure for 10 minutes.
  4. Once the soup is done cooking, quick release the pressure and remove the lid. Taste and adjust seasoning, if needed.
  5. Serve the soup hot with fresh herbs, if desired.
