Ingredients

  • 1 large eggplant
  • 4 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons freshly chopped parsley

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplant into cubes and place them on a baking sheet.
  3. Drizzle the olive oil over the eggplant cubes and toss to coat.
  4. Sprinkle the thyme, garlic powder, and salt over the eggplant and toss to coat.
  5. Roast in the preheated oven for 25 minutes, stirring halfway through.
  6. Remove from the oven and transfer the eggplant cubes to a bowl. Drizzle the lemon juice over the top and stir to combine.
  7. Sprinkle the freshly chopped parsley over the top and serve warm.
