Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/4 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  3. Add the asparagus and simmer for an additional 5 minutes.
  4. Remove the soup from the heat and puree with an immersion blender until smooth.
  5. Stir in the cream and season with salt and pepper to taste.
  6. Serve hot.
