Ingredients

  • 1 cup Ricotta cheese
  • 1/2 cup sugar
  • 1 large egg
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together ricotta cheese and sugar until well blended.
  3. Add the egg, lemon zest, and vanilla extract and mix until smooth.
  4. In a separate bowl, sift together flour, baking powder, and salt. Gradually add to the ricotta mixture and mix until a soft dough forms.

  6. Bake in preheated oven for 10 to 12 minutes, or until lightly golden brown.
