Indian Style Rice with Cashews, Raisins and Turmeric

Ingredients

  • 1 1/2 cups basmati rice
  • 3 tablespoons ghee
  • 1/4 cup cashew nuts, chopped
  • 1/4 cup raisins
  • 1 teaspoon ground turmeric
  • 3 cups water
  • Salt, to taste

Directions

  1. Rinse the basmati rice in a fine-mesh sieve until the water runs clear. Set aside.
  2. Heat the ghee in a large saucepan over medium heat. Add the cashew nuts and raisins and cook until lightly toasted, about 2 minutes.
  3. Add the turmeric and cook for 1 minute.
  4. Add the rice and stir to combine. Cook for 1 minute, stirring constantly.
  5. Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  6. Remove from the heat and let the rice stand, covered, for 10 minutes.
  7. Fluff the rice with a fork and season with salt, to taste.
  8. Serve warm.
