Ingredients
1 tablespoon of olive oil
1 onion, diced
2 cloves of garlic, minced
1 teaspoon of ground coriander
1 teaspoon of ground cumin

1 cup of dried red lentils, rinsed

Directions
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the coriander, cumin, ginger, turmeric, garam masala, and black pepper and cook for another minute, stirring constantly.
Add the lentils and vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
Add the pumpkin and apples and simmer for another 20 minutes, or until the lentils and pumpkin are cooked through.
Season with salt and pepper to taste and serve.
