Ingredients
4 red bell peppers, halved and seeded
1 tablespoon olive oil
1 onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon chili powder
1 cup cooked chickpeas
1/4 cup tomato sauce
1/4 cup butter, melted
1/4 cup plain Greek yogurt

Directions
Preheat oven to 350°F.
Place bell pepper halves on a baking sheet lined with parchment paper.
In a large skillet, heat olive oil over medium-high heat.
Add onion and garlic and cook until onion is softened, about 5 minutes.
Add cumin, coriander, garam masala, and chili powder and cook for 1 minute.
Add cooked chickpeas and tomato sauce and cook for another 5 minutes.
Remove from heat and stir in butter.
Spoon the mixture into the bell pepper halves.
Bake in preheated oven for 30 minutes.
In a small bowl, mix together yogurt, mint, and feta cheese.
Top the peppers with the yogurt mixture and bake for an additional 10 minutes.
Serve warm.
