Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup dry white wine
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons toasted pine nuts

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook for 2 minutes, stirring often.
  3. Add the mushrooms and thyme and season with salt and pepper.
  4. Cook, stirring occasionally, until the mushrooms are golden and beginning to soften, about 8 minutes.
  5. Add the wine and cook for 2 minutes, stirring often.
  6. Stir in the parsley and pine nuts and cook for 1 minute.
  7. Serve warm.
