Ingredients

  • 1 1/2 cups warm water
  • 1 teaspoon sugar
  • 1 teaspoon active dry yeast
  • 2 tablespoons caraway seeds
  • 2 tablespoons olive oil
  • 3 1/2 cups rye flour
  • 1 teaspoon salt
  • 1 tablespoon cornmeal

Directions

  1. In the bowl of a stand mixer, combine the warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
  2. Add the caraway seeds, oil, rye flour, and salt and mix with the dough hook until the dough is smooth and elastic, about 5 minutes.
  3. Cover the bowl with a damp cloth and let the dough rise for 1 hour.
  4. Sprinkle the cornmeal on the bottom of a Dutch oven. Place the dough in the Dutch oven and cover the top with a damp cloth. Let rise for 1 hour.
  5. Preheat oven to 425°F. Place the Dutch oven in the oven and bake for 30 minutes or until the bread is golden brown.
  6. Remove from oven and cool on a wire rack before serving.
