Ingredients
- 1 1/2 cups warm water
- 1 teaspoon sugar
- 1 teaspoon active dry yeast
- 2 tablespoons caraway seeds
- 2 tablespoons olive oil
- 3 1/2 cups rye flour
- 1 teaspoon salt
- 1 tablespoon cornmeal
Directions
- In the bowl of a stand mixer, combine the warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
- Add the caraway seeds, oil, rye flour, and salt and mix with the dough hook until the dough is smooth and elastic, about 5 minutes.
- Cover the bowl with a damp cloth and let the dough rise for 1 hour.
- Sprinkle the cornmeal on the bottom of a Dutch oven. Place the dough in the Dutch oven and cover the top with a damp cloth. Let rise for 1 hour.
- Preheat oven to 425°F. Place the Dutch oven in the oven and bake for 30 minutes or until the bread is golden brown.
- Remove from oven and cool on a wire rack before serving.
