Ingredients

  • 1 cup canned pumpkin puree
  • 2 ripe bananas, mashed
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

Directions

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan.
  2. In a large bowl, mix together the pumpkin puree, mashed bananas, oil, eggs, both sugars, and the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Add the dry ingredients to the wet ingredients and stir until just combined.
  4. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow to cool before slicing and serving.
