Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 4 large eggs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Pita bread or crusty bread, for serving

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper and cook until softened, about 5 minutes.
