Ingredients

  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of mushrooms, sliced
  • 1 red bell pepper, diced
  • 1/2 teaspoon of dried oregano
  • Salt and pepper, to taste
  • 1 can of black beans, drained and rinsed
  • 2 cups of cooked brown rice
  • 1/4 cup of chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, garlic, mushrooms, and bell pepper to the skillet and cook until the vegetables are softened, about 5 minutes.
  3. Stir in the oregano, salt, and pepper. Add the black beans and cooked brown rice to the pan and mix everything together.
  4. Cook everything together for 5 minutes, stirring occasionally, until heated through.
  5. Stir in the parsley and serve.
