Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 pounds boneless pork shoulder, cut into 1-inch cubes
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (28-ounce) can diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 2 cups chicken broth
  • 1 (15-ounce) can garbanzo beans, drained and rinsed

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the pork and cook until lightly browned, about 5 minutes.
  3. Stir in the chili powder, cumin, oregano, salt and pepper. Cook for 1 minute.
  4. Add the tomatoes, green chiles, chicken broth and garbanzo beans. Bring to a boil, then reduce heat to low and simmer, covered, for 1 hour.
  5. Serve hot.
