Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
2 eggs, separated
1/4 teaspoon ground cardamom
2 cups buttermilk
2 tablespoons melted butter, plus more for greasing aebleskiver pan
Directions
In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, beat the egg whites until stiff peaks form.
In a third bowl, mix together the egg yolks, cardamom, buttermilk, and melted butter.
Add the egg yolk mixture to the flour mixture, and stir until combined.
Gently fold in the egg whites until fully incorporated.
Heat an aebleskiver pan over medium heat.
Grease the pan with butter.
Using a small ladle or spoon, fill each indentation in the pan with batter.
Cook for 4-5 minutes, or until golden brown.
Carefully flip each aebleskiver over, and continue cooking for an additional 4-5 minutes.
Serve warm with powdered sugar and jam.
Interesting Facts
Aebleskiver are traditionally eaten on special occasions in Denmark.
They are also known as “Danish Doughnuts.”
