Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 2 eggs, separated
- 1/4 teaspoon ground cardamom
- 2 cups buttermilk
- 2 tablespoons melted butter, plus more for greasing aebleskiver pan
Directions
- In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg whites until stiff peaks form.
- In a third bowl, mix together the egg yolks, cardamom, buttermilk, and melted butter.
- Add the egg yolk mixture to the flour mixture, and stir until combined.
- Gently fold in the egg whites until fully incorporated.
- Heat an aebleskiver pan over medium heat.
- Grease the pan with butter.
- Using a small ladle or spoon, fill each indentation in the pan with batter.
- Cook for 4-5 minutes, or until golden brown.
- Carefully flip each aebleskiver over, and continue cooking for an additional 4-5 minutes.
- Serve warm with powdered sugar and jam.
