1 pound of fresh fruit of your choice, chopped into small pieces
1/4 cup of sugar
2 tablespoons of cornstarch
2 cups of milk
2 tablespoons of butter
1 teaspoon of vanilla extract
4-6 cups of sponge cake, cut into cubes
1 cup of heavy cream, whipped
Directions
In a small bowl, mix together the jam or jelly and orange juice. Set aside.
In a medium saucepan, combine the sherry (if using), chopped fruit, sugar, cornstarch, milk, and butter. Cook on medium-low heat, stirring often, until the mixture thickens and begins to bubble. Remove from heat and stir in the vanilla extract.
Layer the sponge cake cubes, jelly mixture, and custard into a trifle dish. Repeat until all ingredients are used.
Spread the whipped cream over the trifle and chill for at least two hours before serving.
