Curried Chicken Phyllo Parcels

Ingredients

  • 1/2 cup butter, melted
  • 1/4 cup olive oil
  • 1/2 cup yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/2 cup cooked chicken, shredded
  • 1/2 cup plain yogurt
  • 1/4 cup golden raisins
  • 1/4 cup slivered almonds, toasted
  • 1 package phyllo pastry, thawed and cut into 12 pieces

Directions

  1. Preheat oven to 375°F.
  2. In a large saucepan, heat butter and olive oil over medium heat.
  3. Add onion and garlic and cook until onion is soft and translucent, about 5 minutes.
  4. Add curry powder, turmeric, ginger, coriander, cayenne pepper, cardamom, and cinnamon. Stir to combine.
  5. Add cilantro, parsley, chicken, yogurt, raisins, and almonds. Stir to combine and cook for 5 minutes.
  6. Remove from heat and set aside.
  7. Place one piece of phyllo pastry on a lightly floured surface. Brush with melted butter. Place another piece of phyllo pastry on top and brush with butter again.
  8. Spoon 1-2 tablespoons of the chicken mixture into the center of the pastry. Fold the sides in and brush with butter.
  9. Repeat with the remaining pastry and chicken mixture.
  10. Place the parcels on a baking sheet and bake for 20-25 minutes, or until golden brown.
  11. Serve warm.
