2 tablespoons of vegetable oil
1 cup of diced onion
1 cup of diced carrots
1 cup of diced bell pepper

Directions
Heat the oil in a large skillet over medium-high heat.

Add the cooked rice to the skillet and stir to combine.
Push the vegetables and rice to the side of the skillet and crack the eggs into the empty space.

Add the soy sauce and green onion and stir to combine.
Season with salt and pepper to taste.
Serve hot.
