Ingredients

  • 2 tablespoons of vegetable oil
  • 1 cup of diced onion
  • 1 cup of diced carrots
  • 1 cup of diced bell pepper
  • 2 cloves of minced garlic
  • 1 teaspoon of ground ginger
  • 3 cups of cooked white rice
  • 2 eggs
  • 1/4 cup of soy sauce
  • 1/4 cup of chopped green onion
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion, carrots, bell pepper, garlic, and ginger to the skillet and cook for 5 minutes, stirring occasionally.
  3. Add the cooked rice to the skillet and stir to combine.
  4. Push the vegetables and rice to the side of the skillet and crack the eggs into the empty space.
  5. Scramble the eggs until they are cooked through, then stir them into the vegetables and rice.
  6. Add the soy sauce and green onion and stir to combine.
  7. Season with salt and pepper to taste.
  8. Serve hot.
