Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter, melted
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups old-fashioned oats
- 1 cup trail mix, chopped
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon and salt. Set aside.
- In a large bowl, whisk together melted butter and sugars until blended. Add the egg and vanilla and whisk until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats and trail mix.
- Using a cookie scoop, drop dough onto prepared baking sheet, about 2 inches apart. Bake for 10-12 minutes or until the edges are golden brown. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
