Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup bread crumbs
  • 1/2 cup chopped mushrooms
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup diced onion
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth
  • 1/4 cup egg whites

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine the oats, bread crumbs, mushrooms, Parmesan cheese, onion, parsley, garlic powder, oregano, salt, and pepper. Mix until well blended.
  3. In a separate bowl, whisk together the vegetable broth and egg whites. Pour the mixture over the oat mixture and stir until blended.
  4. Form the mixture into 1-inch balls and place on a lightly greased baking sheet.
  5. Bake for 20 to 25 minutes, or until lightly browned.
