Ingredients

  • 1 pound macaroni
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Bring a large pot of salted water to a boil and cook macaroni according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add onion and bell peppers and cook until softened, about 5 minutes.
  3. Add garlic and cook for one minute.
  4. Sprinkle in flour and stir until combined. Cook for one minute.
  5. Slowly add chicken broth and milk, stirring constantly. Cook until sauce is thickened, about 5 minutes.
  6. Stir in oregano, basil, salt and pepper.
  7. Add cooked macaroni and Parmesan cheese and stir to combine.
  8. Serve immediately.
