Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 (14.5 oz) can corn, drained
- 1 (14.5 oz) can black beans, drained and rinsed
- 1 cup uncooked small elbow macaroni
- 1 cup shredded cheddar cheese
Directions
- In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is cooked through and the vegetables are softened, about 8 minutes.
- Add the chili powder, smoked paprika, cumin, oregano, salt, and pepper and stir to combine. Cook for 1 minute more.
- Add the diced tomatoes, tomato sauce, corn, black beans, and macaroni. Stir to combine. Bring to a simmer, then reduce the heat to low, cover, and cook for 10 minutes, stirring occasionally.
- Remove the lid and stir in the cheese. Cook for 5 minutes more, or until the macaroni is cooked through and the cheese is melted.
- Serve hot.
