Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 cup mashed mango
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350°F. Grease an 8-by-4-inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
- Add mango to the butter mixture, then add the dry ingredients in three additions, beating well after each addition. Stir in walnuts.
- Pour batter into prepared pan and bake for 40 to 45 minutes, or until a tester inserted into center of loaf comes out clean.
- Let cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Serve warm with butter.
