Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/8 teaspoon ground coriander
  • 1 cup frozen peas
  • 1/2 cup vegetable broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 2 minutes.
  2. Add oregano, cumin, paprika, and coriander to the pan and cook, stirring, for 1 minute.
  3. Add the peas, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  4. Uncover the pan and simmer for an additional 5 minutes or until the sauce is thickened to your desired consistency.
  5. Remove from heat and stir in the parsley.
