Ingredients
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/8 teaspoon ground coriander
- 1 cup frozen peas
- 1/2 cup vegetable broth
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons chopped fresh parsley
Directions
- Heat olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 2 minutes.
- Add oregano, cumin, paprika, and coriander to the pan and cook, stirring, for 1 minute.
- Add the peas, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
- Uncover the pan and simmer for an additional 5 minutes or until the sauce is thickened to your desired consistency.
- Remove from heat and stir in the parsley.
