Ingredients
- 1 large eggplant, cut into 1/2-inch cubes
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/2 cup grated Parmesan cheese
- 1/2 cup tomato sauce
Directions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook the ground beef, onion and garlic over medium-high heat until the beef is no longer pink, about 8 minutes. Drain the fat from the skillet.
- Stir in the oregano, basil, salt, and pepper. Add the eggplant cubes and cook for 5 minutes.
- Transfer the mixture to a 9x13-inch baking dish. Pour the tomato sauce over the top. Sprinkle with the Parmesan cheese.
- Bake for 20 minutes, or until the eggplant is tender.
