In a large skillet, cook the ground beef, onion and garlic over medium-high heat until the beef is no longer pink, about 8 minutes. Drain the fat from the skillet.
Stir in the oregano, basil, salt, and pepper. Add the eggplant cubes and cook for 5 minutes.
Transfer the mixture to a 9x13-inch baking dish. Pour the tomato sauce over the top. Sprinkle with the Parmesan cheese.
Bake for 20 minutes, or until the eggplant is tender.
