Ingredients

  • 1 large eggplant, cut into 1/2-inch cubes
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup tomato sauce

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef, onion and garlic over medium-high heat until the beef is no longer pink, about 8 minutes. Drain the fat from the skillet.
  3. Stir in the oregano, basil, salt, and pepper. Add the eggplant cubes and cook for 5 minutes.
  4. Transfer the mixture to a 9x13-inch baking dish. Pour the tomato sauce over the top. Sprinkle with the Parmesan cheese.
  5. Bake for 20 minutes, or until the eggplant is tender.
  6. Serve and enjoy!
