Ingredients

  • 3 cans (5 oz) tuna in water, drained
  • 1 cup shelled edamame
  • 1 large tomato, diced
  • 1/4 cup minced red onion
  • 1/4 cup light mayonnaise
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Directions

  1. In a large bowl, combine the tuna, edamame, tomato, and red onion.
  2. In a small bowl, combine the mayonnaise, mustard, garlic powder, salt, and pepper.
  3. Add the mayonnaise mixture to the tuna mixture and stir to combine.
  4. Garnish with parsley, if desired.
