Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 cup olive oil
- 2 tablespoons garlic, minced
- 1/2 cup red wine vinegar
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Directions
- In a large bowl, combine the olive oil, garlic, red wine vinegar, rosemary, thyme, oregano, parsley, salt and pepper.
- Add the chicken thighs to the marinade and mix until the chicken is completely coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or overnight.
- Preheat the oven to 375 degrees F.
- Remove the chicken from the marinade and place in a shallow baking dish.
- Bake for 30 minutes, or until the chicken is cooked through.
- Serve with your favorite side dish.
