Ingredients
- 4 salmon filets
- 1/2 cup shelled pistachios
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons minced garlic
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Directions
- Preheat oven to 400°F.
- In a food processor, pulse together pistachios, olive oil, lemon juice, garlic, salt, and pepper until finely chopped.
- Place salmon filets on a greased baking sheet.
- Spread a thick layer of pistachio mixture over each filet.
- Bake for 10-15 minutes, or until fish is cooked through.
