Ingredients

  • 4 salmon filets
  • 1/2 cup shelled pistachios
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons minced garlic
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 400°F.
  2. In a food processor, pulse together pistachios, olive oil, lemon juice, garlic, salt, and pepper until finely chopped.
  3. Place salmon filets on a greased baking sheet.
  4. Spread a thick layer of pistachio mixture over each filet.
  5. Bake for 10-15 minutes, or until fish is cooked through.
  6. Serve with lemon wedges and enjoy!
