Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 2 teaspoons curry powder
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 2 pounds boneless, skinless chicken thighs
- 1/2 cup chicken stock
- Salt and pepper, to taste
Directions
- Set the Instant Pot to sauté mode and heat the oil. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ginger, curry powder, turmeric, cumin, and cinnamon, and cook until fragrant, about 1 minute.
- Add the chicken thighs and stir to coat with the spices. Pour in the chicken stock and season with salt and pepper.
- Secure the lid on the Instant Pot, seal the valve, and set to high pressure for 10 minutes. When finished, quick release the pressure.
- Open the lid and stir the chicken. Serve with your favorite sides.
