- 2 tablespoons ground flaxseed meal
- 6 tablespoons water
- 1 ¼ cup plant-based milk
- 1 cup all-purpose flour

Directions
- In a small bowl, mix together the ground flaxseed meal and the water. Let the mixture sit for 5 minutes until it thickens.
- In a medium bowl, whisk together the milk, flour, baking powder, sugar, and salt.
- Add the flaxseed meal mixture and the vanilla extract (if using) to the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium-high heat and lightly grease with vegetable oil. Pour ¼ cup of batter for each pancake onto the skillet.
- Cook for about 2 minutes, or until small bubbles begin to form on the surface. Flip the pancakes and cook for another 1-2 minutes, or until golden brown.
- Serve hot with maple syrup or your favorite pancake toppings.
