Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 pound parsnips, peeled and diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 375°F. Grease a 9x13-inch baking dish with butter or nonstick cooking spray.
  2. In a large bowl, toss together the potatoes, parsnips, olive oil, garlic, salt, and pepper until the vegetables are evenly coated.
  3. Spread the vegetables in the prepared baking dish.
  4. Pour the cream over the vegetables and sprinkle with the Parmesan cheese.
  5. Bake for 30 minutes, or until the vegetables are tender and the top is golden brown.
  6. Serve warm.
