- 2 pounds potatoes, peeled and diced
- 1 pound parsnips, peeled and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
Directions
- Preheat the oven to 375°F. Grease a 9x13-inch baking dish with butter or nonstick cooking spray.
- In a large bowl, toss together the potatoes, parsnips, olive oil, garlic, salt, and pepper until the vegetables are evenly coated.
- Spread the vegetables in the prepared baking dish.
- Pour the cream over the vegetables and sprinkle with the Parmesan cheese.
- Bake for 30 minutes, or until the vegetables are tender and the top is golden brown.
