  • 1 head of cauliflower, cut into florets
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste


  1. In a slow cooker, combine the cauliflower, onion, garlic, and broth.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. In a small saucepan, melt the butter over medium heat. Add the flour and stir until combined.
  4. Slowly whisk in the heavy cream until the mixture is smooth. Cook for 2-3 minutes, stirring constantly, until the mixture thickens.
  5. Add the cream mixture to the slow cooker and stir to combine.
  6. Add the cheese and stir until melted.
  7. Season with salt and pepper to taste.
