- 1 head of cauliflower, cut into florets

Directions
- In a slow cooker, combine the cauliflower, onion, garlic, and broth.

- Slowly whisk in the heavy cream until the mixture is smooth. Cook for 2-3 minutes, stirring constantly, until the mixture thickens.
- Add the cream mixture to the slow cooker and stir to combine.
- Add the cheese and stir until melted.
- Season with salt and pepper to taste.
- Serve warm the soup with crusty bread or crackers.
