  • 1 cup of uncooked black-eyed peas
  • 1/2 cup of diced onion
  • 1 diced bell pepper
  • 2 cloves of minced garlic
  • 1 teaspoon of Cajun seasoning
  • 1/2 teaspoon of smoked paprika
  • 1/4 teaspoon of cayenne pepper
  • 2 cups of vegetable broth
  • 1 cup of cooked brown rice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper


  1. In a medium-sized pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper and cook for 3-5 minutes, stirring occasionally, until the vegetables are softened.
  2. Add the minced garlic and cook for an additional minute.
  3. Add the Cajun seasoning, smoked paprika, and cayenne pepper and stir to combine.
  4. Add the black-eyed peas and vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer, covered, for 25 minutes or until the peas are tender.
  5. Add the cooked brown rice, salt, and black pepper and stir to combine. Simmer for an additional 5 minutes.
  6. Serve the Hoppin' John hot, with your favorite toppings.
