Ingredients

  • 1 cup of uncooked black-eyed peas
  • 1/2 cup of diced onion
  • 1 diced bell pepper

  • 1/4 teaspoon of cayenne pepper
  • 2 cups of vegetable broth
  • 1 cup of cooked brown rice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Directions

  1. In a medium-sized pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper and cook for 3-5 minutes, stirring occasionally, until the vegetables are softened.
