Ingredients
- 1 cup of uncooked black-eyed peas
- 1/2 cup of diced onion
- 1 diced bell pepper
- 2 cloves of minced garlic
- 1 teaspoon of Cajun seasoning

- 2 cups of vegetable broth
- 1 cup of cooked brown rice

Directions
- In a medium-sized pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper and cook for 3-5 minutes, stirring occasionally, until the vegetables are softened.
- Add the minced garlic and cook for an additional minute.

- Add the cooked brown rice, salt, and black pepper and stir to combine. Simmer for an additional 5 minutes.
