  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 banana, mashed
  • 4 slices of white bread
  • 2 tablespoons butter
  • Maple syrup, for serving (optional)


  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and mashed banana.
  2. Heat a large skillet over medium-high heat and melt the butter.
  3. Dip each slice of bread into the egg mixture, coating both sides.
  4. Carefully place the slices of bread into the hot skillet and cook until golden brown, about 3 minutes per side.
  5. Serve with a drizzle of maple syrup, if desired.
