Ingredients
- 1 whole chicken, about 3-4 pounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons minced garlic
- 2 tablespoons fresh chopped rosemary
- 1 lemon, cut into wedges
Directions
- Preheat oven to 375°F.
- In a roasting pan, place the whole chicken and drizzle with olive oil. Rub the oil all over the chicken, making sure to get under the skin.
- Sprinkle with salt, pepper, garlic, and rosemary. Place lemon wedges inside the chicken.
- Bake in preheated oven for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F.
- Remove from oven and let rest for 10 minutes before serving.
