  • 1 whole chicken, about 3-4 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons minced garlic
  • 2 tablespoons fresh chopped rosemary
  • 1 lemon, cut into wedges


  1. Preheat oven to 375°F.
  2. In a roasting pan, place the whole chicken and drizzle with olive oil. Rub the oil all over the chicken, making sure to get under the skin.
  3. Sprinkle with salt, pepper, garlic, and rosemary. Place lemon wedges inside the chicken.
  4. Bake in preheated oven for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F.
  5. Remove from oven and let rest for 10 minutes before serving.
