Ingredients

  • 2 cups couscous
  • 2 tablespoons olive oil
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced carrots
  • 1/2 cup diced tomatoes
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 3 cups chicken broth

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, bell peppers, and carrots and cook until softened, about 5 minutes.
  3. Add tomatoes, feta cheese, oregano, garlic powder, and black pepper and cook for 2 minutes.
  4. Add couscous and chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 10 minutes.
  6. Fluff with a fork and serve.
