  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 cup potatoes, chopped
  • 1 cup carrots, diced
  • 1 cup green peas
  • 1 cup tomatoes, chopped
  • 1 cup cauliflower, chopped
  • 1 cup green beans, chopped
  • 1 cup bell peppers, chopped
  • 2 tablespoons tomato paste
  • 1/2 cup water
  • Salt to taste
  • 1/4 cup cilantro, chopped
  • 4 pav buns
  • 1 tablespoon butter


  1. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook for about 3 minutes, stirring frequently.
  2. Add the cumin powder, coriander powder, garam masala, turmeric powder, and red chili powder. Stir to combine and cook for an additional 2 minutes.
  3. Add the potatoes, carrots, green peas, tomatoes, cauliflower, green beans, and bell peppers. Stir to combine and cook for another 5 minutes.
  4. Add the tomato paste and water. Stir to combine and cook for an additional 5 minutes.
  5. Add salt to taste. Stir to combine and cook for an additional 2 minutes.
  6. Add the cilantro and stir to combine.
  7. Split the pav buns in half and spread butter on the inside. Toast the pav buns until lightly golden. Serve the Pav Bhaji Curry with the toasted pav buns.
