Zucchini-Sausage Mini Pizzas

  • 1/2 pound sweet Italian sausage, casings removed
  • 1 small zucchini, diced
  • 1/4 cup chopped onion
  • 1/4 cup sliced mushrooms
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 package (10-count) refrigerated pizza dough


  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet over medium heat, cook sausage until browned. Drain fat, and set aside.
  3. In a medium bowl, mix together zucchini, onion, mushrooms, oregano, garlic powder, salt, and pepper. Add to sausage, and cook for about 5 minutes, stirring often.
  4. Spread pizza sauce over each pizza crust. Sprinkle mozzarella cheese over each pizza, and top with sausage and zucchini mixture. Sprinkle Parmesan cheese over the top, and top with basil.
  5. Bake for 15 minutes, or until cheese is melted and crust is golden brown.
