Ingredients
- 1/2 cup (125 mL) butter, softened
- 1 cup (250 mL) packed light brown sugar
- 2 large eggs
- 1 cup (250 mL) mashed ripe bananas (about 3 bananas)
- 1/4 cup (60 mL) molasses
- 2 cups (500 mL) all-purpose flour
- 2 teaspoons (10 mL) baking powder
- 1/2 teaspoon (2.5 mL) baking soda
- 1/2 teaspoon (2.5 mL) ground cinnamon
- 1/4 teaspoon (1 mL) ground nutmeg
- 1/4 teaspoon (1 mL) salt
Directions
- Preheat oven to 350°F (180°C). Grease a 9x5-inch (2 L) loaf pan.
- In a medium bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs, one at a time, until blended. Stir in bananas and molasses until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- Add to the banana mixture and stir until just combined. Pour batter into prepared pan.
- Bake in preheated oven for 45 minutes, or until a toothpick inserted into center of the loaf comes out clean.
- Cool in pan for 10 minutes before removing to cool completely.
