Ingredients

  • 1 cup green lentils, washed and drained
  • 1 cup long grain white rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 cups vegetable broth
  • 1/2 cup fresh parsley, roughly chopped

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook for 3-4 minutes, until softened.
  2. Add the garlic and spices and cook for 30 seconds.
  3. Add the lentils, rice, vegetable broth, and salt. Bring to a boil, reduce the heat to low, cover, and cook for 25-30 minutes, until the lentils and rice are tender.
  4. Stir in the parsley and serve.
