Ingredients
- 1 cup green lentils, washed and drained
- 1 cup long grain white rice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin

- 1 teaspoon smoked paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 cups vegetable broth
- 1/2 cup fresh parsley, roughly chopped
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and cook for 3-4 minutes, until softened.
- Add the garlic and spices and cook for 30 seconds.
- Add the lentils, rice, vegetable broth, and salt. Bring to a boil, reduce the heat to low, cover, and cook for 25-30 minutes, until the lentils and rice are tender.
- Stir in the parsley and serve.
