Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced

  • 2 cups kale, stems removed and chopped
  • 1/4 cup vegetable broth

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onions and season with salt, pepper, and garlic powder. Stir to combine.
  3. Cook, stirring occasionally, for about 10 minutes until the onions are softened and lightly browned.
  4. Add the kale, vegetable broth, and balsamic vinegar to the skillet. Stir to combine.
  5. Cook for an additional 5 minutes, stirring occasionally, until the kale is wilted and the liquid has mostly evaporated.
