Ingredients

  • 1 pound of fresh shrimp
  • 1/2 pound of noodles
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 2 tablespoons of tomato paste
  • 2 cups of vegetable broth
  • 1 cup of water
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/4 cup of fresh parsley, chopped

Directions

  1. In a large pot over medium heat, heat the olive oil and sauté the onion and garlic until softened.
  2. Add the tomato paste and stir until combined.
  3. Add the vegetable broth, water, cumin, oregano, black pepper, and cayenne pepper and stir until combined.
  4. Add the carrots, celery, and parsley and stir until combined.
  5. Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.
  6. Add the shrimp and noodles and simmer for 10 minutes, or until the shrimp is cooked through.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot.
