Ingredients
1/4 cup olive oil
1 large onion, chopped
2 cloves garlic, minced
2 large beets, peeled and diced
1/2 cup white wine
2 cups vegetable broth

Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook for 3-4 minutes, until softened.
Add the beets and cook for another 3-4 minutes.
Add the wine and cook for about 1 minute.
Add the vegetable broth, oregano, and pepper and bring to a boil.
Reduce the heat to low and simmer for about 10 minutes, until the beets are tender.
Add the cream and Parmesan and stir to combine.
Meanwhile, cook the fettuccine according to package instructions.
When the fettuccine is done, drain it and add it to the sauce.
Stir to combine and serve.
